Follow this link to read the post. Who doesn’t LOVE Carrot Cake?! I know that I do! This sweet, spicy, moist cake with rich cream cheese icing is perfect with a nice cuppa tea or coffee after dinner or anytime. This is my own recipe that I’ve been making for years. I truly hope you love it as much as I do!
The Goods!
1 cup sugar
The ingredients being very cute for their photo shoot! ????
1 cup cooking oil
3 eggs
1 1/3 cup flour
1.5 tsp. baking soda
1.5 tsp. baking powder
1/2 tsp. Salt
1.5 tsp cinnamon
1/2 cup raisins
2 cups grated carrots
2 cans cream cheese icing
The way!
Marie Antoinette said “Let them eat cake!” I agree, but first we gotta bake it!????
Preheat your oven to 350 degrees.
Take your sugar and oil and cream them together for a few moments either in a large bowl or a sexy mixer like this one. ????
Crack your three eggs into a small bowl or measuring cup and add 1 egg at a time, all the while still mixing.
Next! Take all of your dry ingredients including flour, baking powder and soda, salt and cinnamon and add them to this gorgeous batter. Mix that on medium speed until it’s fully combined and smells like cinnamon heaven! Don’t forget to scrape down your bowl just in case you have some sneaky bits stuck to the bottom. ????
Last but not least, the star of the show and its shrivelled up co- star…carrots and raisins! Go ahead and toss these two into the mix and give one more stir until combined. Once again scrape down your bowl. ☺️
Now to prepare the cake pan. I use an aluminium pan from Wilton that is 6 inches in diameter and 3 inches deep. I brush on a light coating of cooking oil then I cut a circle and some strips out of parchment paper (baking paper) to cover both the bottom and sides of the pan. This trick ensures your cake will never stick!
Go ahead and pour your batter into the pan and place it in the oven for one hour. After the hour is up take a tooth pick and stick it into the middle of the cake, if it comes out clean pull that baby out! If not bake it at 10 minute long intervals until completely baked. ????
As you can see above the finishe cake looks so great and OMG the smell!!!
Once the cake is cooled I went ahead and levelled off the cake just a bit in order to make icing it easier. I then torted the cake (fancy word for cutting into two layers). I placed just over half of one can of the cream cheese icing in the centre of the bottom layer and spread that out evenly. Then I took the top of the cake and flipped that upside down onto the bottom layer. This way the top of the cake is nice and flat! ????I then went on to ice the rest of the cake.
I really did not want this cake to look too polished as it is a very rustic cake to begin with. I achieved the look I wanted by taking my frosting spatula and swirling it around all over the cake. I am happy with the outcome. And let’s be honest here, most of us want to eat cake not sit there and marvel at its perfection! ????

Follow this link to read the post. This hearty dessert is one from my childhood and one that is perfect for the cold winter months. I hope that you thoroughly enjoy my SweetNiss Apple Crisp!

The goods!
2 cups cake/ pastry flour
2 cups rolled oats ( I used quick oats)
2 cups butter or margarine
4 large apples
2 tsp. cinnamon
The way!
Brrrrrrr! Baby it’s cold outside! How about making this sweet treat to warm you up? ????
Start by coring and slicing up those four beautiful apples. A lot of people would peel them as well but hey fibre is good for you! Also if you choose a tender fleshed Apple like Gala the skins will soften in the oven. ????
Next, lets get that crumble crumbly shall we?!
Measure out two cups each of flour, oats and brown sugar into a bowl or mixer and stir to combine. If you decide to go with butter as your fat of choice cut it up into cubes first. Then proceed to with mix it up with your hands or the mixer to get the crumbles happening. If you choose margarine like we did here then simply cut it in with a fork or again feel free to use your hands. ITS FUN!!! ????????
LETS GET RRRRRREADYYYY TO CCCCRRRUUUMMMMBBBLLLLEEEE!!!! ????
Place your apple slices into a 9×13 baking dish and take half your perfectly crumbly crumble and mix it into the apples.
Go ahead and pour on the rest of the crumbles on top and press down slightly. Not too hard or your crumbles will lose their crumbliness.
Hmmmm I think I’m taking this crumble stuff a bit too far! ????
Preheat your oven to 350 degrees and bake for 45 min. Then raise the temperature to 400 and bake an extra 15 min to brown the top. ♨️
Here it is!! The finished product!!! Sweet, gooey and of course crumbly!!! Feel free to eat it hot with melted vanilla ice cream or like us, cooled with custard!!!

The goods!
2.5 cups all purpose flour
5 tsp. baking powder
6 tbsp. white sugar
1.5 tsp. salt
2 eggs
1.5 cups milk
6 tbsp. butter or margarine
1 large or two small bananas
1.5 tsp vanilla
1 tsp cinnamon
The way!
Let’s get this beautiful breaky party started! ????
Begin with mixing all dry ingredients together; flour, baking powder, sugar and salt. You can do this in a large bowl or a fancy shmancy mixer like this one!
In a large measuring cup melt your fat of choice in the microwave, only slightly. Stir that around until it’s cooled some, then add both eggs and whisk. BEAT IT!
Go ahead and add your milk and vanilla, stir it up and slowly add it to the dry mix. Be careful not to over mix, you don’t want rubber pancakes. Or do you?! ????
I then mush up the banana with my hand right into the mixer. (this feels glorious!) if you find that unsanitary go ahead and use a fork. Go ahead and add the cinnamon. ????
I try to let the mixture chillax for a half hour, this helps ensure a nice fluffy pancake. ☁️
I then heat up my lovely stovetop griddle and start flippin’ hot cakes!
In our home we try to stay away from syrups, as many have high fructose corn syrup in them. Good Lord they taste good but let’s face it, probably not the best thing for our tummies.
My husband is English and he was raised having lemon and a sprinkle of sugar on his pancakes. At first I was hesitant but it’s actually quite delightful. **said in the worst English accent attempt imaginable** ????????
If your a Canadian like me, peanut butter is a food group and you’d also love a great slathering of that as an alternative. ????????
